This, however, would be to use the word in its broadest sense and would encompass technologies discussed in separate papers. For instance, the low natural colour in beet juice makes it possible to produce an acceptable refined sugar in one operation. Similarly it is possible to produce a food grade low colour sugar, often called 'blanco directo', in a cane sugar mill. These notes deal with the production of low colour white sugars from cane, either in a "white end" processing all of the production from a cane sugar factory or in an autonomous refinery. There has been a clear trend in recent years towards the production of lower colour sugars at cane factories. In part this is a response to the market but it is also the result of recognising the lower production costs of doing so.

Sugar is naturally white. When the sugar is initially extracted from the plants, it has a golden color because of the non-sugar materials attached to and within the sugar crystals. This golden sugar is then purified, where these plant fibers and molasses are removed, extracting the sugar molecules from the non-sugar materials and restoring the sugar crystals to their natural white color. Most of the non-sugar materials generated in sugar processing are used for other purposes , recycled or reused. It takes about four rounds of extraction to remove the molasses to obtain the maximum amount of sucrose. The sugar beet residue, or pulp, is generally used for animal feed or further processed for use as other carbohydrate-based products. The sugar cane stalk residue, called bagasse, is often used as fuel to run the cane factory.

Sugar is remarkable in so many different ways. It is natural and has been produced from sugar cane and sugar beet for thousands of years. After processing and refining, not only are the end products exceptionally pure and highly marketable, but even the by-products can be sold or put to good use. Sugar beet mills are normally close to the farms where the beets are grown. At the mill, the raw beets are cleaned, sliced and then put through a process that extracts the sugar by means of diffusing with water, purification, filtration, evaporation and crystallization. Available by-products include soil and stones, animal feeds, fertilizer, molasses and biogas.
